We made Heurvos Rancheros for dinner the other night. It’s a great, easy meal, made with ingredients that are easy to store in your kitchen. We used the recipe from the Joy of Cooking as a guide, and then took off on our own. We basically did the following:
• Heat some oil in a pan, and lightly toast a few corn tortillas (we used 2 blue each)
• Mix a can of diced tomatoes (drained) with a can of black beans and simmer until heated through
• Fry eggs (again, 2 each) to desired doneness.
To plate, we put down the fried tortillas, a bit of cheese to melt, the eggs, and spooned the beans and tomatoes over. We also threw on some salsa, sour cream and cilantro. We made toast, because, well, I love bread. It ain’t a meal without bread.
Oh yeah, it’s vegetarian, Not vegan, but meatless. Enjoy, we did!
