I offered to bring a little something for breakfast on Christmas Day. I’m sick and tired of scones and muffins and wanted to try something a little different, but still festive and delicious. I found a recipe on the blog, Culinary Concoctions by Peabody, for a Pumpkin “Cinnamon Roll” Coffee Cake and I knew I had found my recipe. I had saved some leftover roasted pumpkin from the Pumpkin Pie I made at Thanksgiving, so I wouldn’t even need to use the canned stuff.
There are a few steps involved, but Husband joined me in the kitchen just at the right time and took over the task of spreading the layers. On the bottom (which becomes the top) is a layer of caramel and pecans, then cake batter. streusel, cake batter and more struesel. He did a great job and had a lot of patience. I would have gotten frustrated immediately. But as Peabody writes, it was all worth it. The Coffee Cake was really moist and full of flavor. It started Christmas day off the right way. I think I’ve started a tradition!
