Well, sort of. Nothing like the photo in the book. Nothing much like any marshmallow I’ve ever had. They tasted vaguely like a marshmallow I’d had in the past. But really, do they look like marshmallows?
I joined Tuesdays with Dorie to push my baking skills. I knew this one would be a challenge, and really, I was right. My first guess is that I didn’t beat the eggs long enough. Would that be possible?
I tore off a piece (with effort) and sort of enjoyed it. Husband tore off a piece and sort of enjoyed it. A tore of another and actually asked if I would every try this again. Maybe, I think, with some help?
Was it a recipe that added a gelatin mix to the whites, then whipped that into a fluffy mess? I have done scratch marshmallows before using a recipe from the ‘Cooking with Engineers’ sight and they are really, really good but you do have to beat the heck outta that stuff! And the warm gelatin mixture stinks…..ewww
The result, while good, does not brown and crisp like a commercial marshmallow, so attempting a ‘Smore’ with a nicely toasted slice doesn’t work as one would wish. They do, however, and I can attest to this with optimal confidence, taste wonderful dipped in chocolate and coated with graham cracker crumbs. Kinda like a Smore bar, but better.
If it is your thing to challenge yourself, try it again, maybe look up the Engineers site recipe for reference. Ever seen that site? You might get hooked.
Maybe not what you had hoped they would be, but a wondeful experience just the same. Now you have a reference point to work from in your quest to make a better marshmallow!
Better luck next time with the marshmallows…if at first you don’t succeed, try, try again! By the way, I think Bogey would really want you to perfect the art of the marshmallow 🙂
I would suggest to you to definitly try them again! They are really worth it.
I think it’s the egg whites. I’ve made marshmallows with and without egg whites and I have to say the ones without are more to my liking.
If you don’t love it, you don’t love it. There are always more desserts to conquer!

You can’t love everything in the book. I think the tally is half & half on the marshmallows. I loved them, but not everybody does.

I usually love homemade marshmallows but I use an egg-less version. They always come out much better!
This seemed like a love it or leave it recipe.
